Among a hugely competitive field, your business shone through, how does that feel?!
I honestly couldn’t believe it when I was announced as the winner – I’ve put my heart and soul into this industry over the past year, and I’m just so glad that my passion shone through! I was incredibly proud.
What’s been the best reaction you’ve had since the win?
For me, the reaction of Martin from Castell Howell actually brought me to tears. He was on the panel that interviewed me for Rising Star and his comments meant the world to me. Aside from that, the support & encouragement I receive from my family, partner & friends is unwavering and is my source of enthusiasm.
Who inspires you in the food and drink world and why?
There are so many people in this industry that I take inspiration from and admire. My baking hero is Richard Bertinet, who has a bakery and baking school in Bath. I have all his recipe books and hope to book one of his courses soon too! My personal idols are also Sara Autton and Daryl Stephenson – both of whom I owe my baking career to. Daryl has introduced me to many different people, societies and events in the industry and Sara has been an incredible support at every step of my career – I aspire to one day be as helpful to young bakers as she has been with me. I admire several Welsh producers and businesses – some that come to mind are Welsh Homestead Smokery, Henllan Bread, Cracked Coffee and Snowdonia Cheese Company.
Got any words of wisdom for someone dreaming of launching a food or drink business?
I think people following their dreams and passions are vital to this industry. Starting a business really isn’t easy, but it’s so rewarding too! I work full time as a Head Baker, but also run my own business Little Welsh Foodie alongside this, making wedding cakes and creating content for businesses. It’s hard work, but I absolutely love it!
What drives you to create change or set new standards in the Welsh food and drink industry?
I think the food and drink industry is incredibly exciting and ever-evolving. I think Welsh tourism is only on the up and I’m incredibly proud to work in hospitality. We need to inspire the next generation to join us and take it in new directions!
What’s next for you and the business, any exciting plans on the horizon that you can share?
I want to continue to inspire the next generation of bakers into our industry – whether that’s through presentations in schools and colleges, courses, trips to industry and just promoting opportunities through my social media channels too. I’m incredibly passionate about this and I’m working with some fellow bakers in Wales to get the word out!
Finally, what’s the best bit about being part of the Welsh food and drink scene?
It gives me an incredible sense of pride to work in Wales in this industry. I’ve lived in Wales all my life (30 years in a 3 mile radius!) and I love where I live. Wales is a beautiful country with some incredible independent producers, who have a passion for sharing the best of Wales.
