Among a hugely competitive field, your business shone through, how does that feel?!

I’m so grateful. The baking industry is an extremely difficult profession, in which to find talent, specially due to the early hours we work (2am starts) so for the judges to recognise, that we do everything we can to build new bakery talent, rather than industrialise the baking, is a real pat on the back not just for us, but for all artisan bakers out there, who get up VERY early in the mornings, to have fresh baked goods on the shelfs for you, when you visit any of us.

What’s been the best reaction you’ve had since the win?

Loads of people have kindly congratulated us both in person and online. I feel it has given the Brød team a great boost and cemented that what they are making, and the service they provide, is being recognised and valued.

Who inspires you in the food and drink world and why?

I’m inspired by people who stay true to their craft and genuinely care about quality and hospitality. There are so many hardworking people in this industry who put everything into creating something special for others to enjoy.

Got any words of wisdom for someone dreaming of launching a food or drink business?

You have to do it for the love of seeing others enjoy what you’ve created. It’s a really tough industry, so keep it simple and stay focused on quality.

What drives you to create change or set new standards in the Welsh food and drink industry?

Defiantly our lovely customers! who show up not only for our products but also for the Brød team members. It’s really nice to see the banter between the team and both regular and new visitors to our bakeries.

What’s next for you and the business, any exciting plans on the horizon that you can share?

I hope to get our ‘Brød Skole’ running at our main bakery (off Newport Road). I’m currently looking for instructors/teachers not just in baking, but also for cooking & creative workshops, that we can host in our purpose-built kitchen & workshop.

Finally, what’s the best bit about being part of the Welsh food and drink scene?

I’m so grateful to the organisers (Sian and Liz) for making a fuss about our industries. It’s so easy to forget – or not fully appreciate – the hard work that goes into serving a humble cup of coffee or a five-course meal. The amount of work involved in making, even a simple pastry, served to us in a coffee shop, involves everyone from the farmers, to the millers, the delivery drivers, to the bakers/chefs, to the servers/Barista, to the pot washer. Without any of these professionals the Artisan Food & Drink industries, would not be part of the community.
